Wiring a concrete building with rebar. Drilling holes so antennas can go through walls but access points stay in one location. Want to use 802.11n MIMO routers with 6 meter antenna extension cables to different rooms 20+ feet apart. Would this still work for MIMO?

Not reliably. MIMO antennas are intended to work together via spatial multiplexing to improve SNR. Also, hidden-node problems arise when radiation doesn't propagate between rooms — CSMA/CA can't work. Better: use PoE and dedicated APs per room via CAT5.
